1. Certifications


All herd handlers are Beef Quality Assurance certified. We prioritize good animal husbandry techniques to grow our cattle efficiently and safely. We stay up to date on research based suggested practices, and have an active biosecurity plan to ensure your beef supply is safe.


2. Pasture Raised - Grain Finished


Calves are born in pastures to healthy cows with wholesome, nutritious forage. As the calves grow, they are offered more forage, along with grain products, to give the beef that taste we all crave. All animals are kept up to date on vaccinations and tracked throughout the various production phases. Any cattle that develop health concerns are properly treated and removed from our retail program.


3. Inspected


Rocky Top Beef is harvested at a facility right here in southeast Kansas. Each stage of the process meets guidelines of the USDA, confirmed by a qualified inspector to ensure a safe and wholesome product for your table. All retail cuts are double wrapped in clear packages, vacuum sealed and frozen.


4. Dry Age


The natural process of dry aging increases tenderization and enhances flavor. Our beef is dry aged for fourteen days.


5. Restocking Monthly


At Rocky Top Meats, we don't mass produce- we pasture produce.


Our beef is ranch raised with time, care, and Kansas grit. Because we do it right, we restock the beef once a month.


When it sells out, that just means the herd's doing its job.

6. Courtesy



Orders allow for two pickup opportunities at your chosen location. If not picked up after the second date, the order will be canceled and items returned to inventory. We have limited freezer space and appreciate timely pickup
